The activation switch of enableGraphInsights is disabled until the system default is overridden, which is easy to miss. Describe the Override and Save steps and replace the outdated screenshot with two new ones

Note that enableGraphInsights exists in every application view even without a deployed extension, and describe the snapshot step that enables the Graph Insights tab. Drop the duplicate Graph-Insights tag, correct the graphinsights profile name, use shell-session fences and plain anchors for same-page links.
