Be able to set "always open as" for specific file types

Feature description

I work a lot with .ahk files, but the "Open with" dialogue doesn't show any text editor. I can open them in Fossify's built-in text editor if I choose "open as: text document," but I must keep highlighting the file and entering the menu every time to do this. It would be great if the settings had a section that let us set "always open as" for specific file types to skip the constant file selection and menu navigation every time.

Why do you want this feature?

It would make basic file-editing light years faster and generally make all files more accessible if we could specify "always open as X" types for specific file types.
